New Scouting section - constant change is the new normal
"Losing 80% of the occupancy in two days and going from over 2,500 lunches a day to 500 is a huge change that is hard to imagine." Survival requires a healthy and strong company culture with the right key people who are passionate about good gastronomy and succeeding in their business. In this episode of Pejling, chef, restaurateur and entrepreneur Peter J Skogström describes how the industry has been and is being affected by the pandemic.
Peter is one of Sweden's most renowned chefs. Among other things, he has won Olympic gold and World Cup gold together with the Swedish National Culinary Team, as well as Chef of the Year and most recently Kockarnas Kamp. Peter runs the company Smarta Kök together with Patrik Alemo, which includes seven businesses such as restaurants like Mat och Vin i Slottsparken, Niagara and P2. For some time now, Peter has also been responsible for all food and drink at Eleda Stadium.
